Maybe you’re in a rut. You know bananas have a lot of great nutrients in them (and they’re naturally sweet!), but you’re tired of your recipes and need some new ones to liven things up a bit. Below are some fresh ideas for how to incorporate bananas into your life, whether for breakfast, lunch, or a snack!
Mash ’em
Thoroughly mash one ripe banana with a fork on a small plate and transfer to a small bowl. Add 1 Tbsp nut butter, sprinkle generous cinnamon, and stir to incorporate. If desired, add 1 scoop of collagen peptides or protein powder.
Boat ’em
Cut a medium ripe banana in half lengthwise and lay cut sides up on a plate. Drizzle with nut butter of choice and sprinkle with chocolate chips, coconut flakes, or raisins. Cinnamon is always welcome!
Pancake ’em
Thoroughly mash one ripe banana with a fork on a small plate. In a separate bowl, whisk one egg with a fork. Add the mashed banana to the egg and stir together. Add 1-2 Tbsp almond flour and generous cinnamon, then stir to combine. Pour Tbsp sized scoops out on a parchment paper-lined baking sheet and bake at 350 degrees for 8-10 min until mini pancakes are set. Alternatively, cook on the stove top in generous butter or oil of choice. Make 3-4 batches at once and store in the fridge or freezer to quickly pull out for an easy meal or snack. Smoothie ’em
Slice bananas into a glass container and freeze or make smoothie pack pouches with 1-1.5 bananas each and store in the freezer to make a smooth and delicious nice cream smoothie. When using frozen banana slices, there is no need for ice (which leaves my smoothies chunky anyways). Just add a very small amount of water or milk plus 1-2 tsp ground cinnamon and a dash of pure vanilla extract, and you will end up with a thick, delicious treat!
Bake ’em (into cookies!)
Thoroughly mash one ripe banana with a fork on a small plate and transfer to a small bowl. Add 1 Tbsp nut butter, 1 Tbsp almond flour, and a generous dash of cinnamon, and stir until well combined. Pour Tbsp-sized scoops out on a parchment paper-lined baking sheet and bake at 350 degrees for 8-10 minutes until cookies are firm on top and edges are slightly golden. Eat immediately or store in the fridge for 3-5 days.
Soufflé ’em
Whip up a quick and easy soufflé with one mashed banana, 2 whisked eggs, 2 Tbsp almond flour, and generous cinnamon. Stir to combine, then microwave for 3 minutes and allow to cool before eating. Feel free to add a dash of cacao!
