Superfood Protein Balls
Whether you need a breakfast component or an on-the-go snack, these Superfood Protein Balls are the tasty solution! With a food processor and a handful of ingredients (with a great deal of artistic license), you can make a satisfying superfood snack that's just right for you.

Step 1
Add the first four ingredients (plus optional collagen and/or flaxseed, if desired) to a large food processor and pulse 10 times until nuts are chopped into small pieces.

Step 2
Add coconut oil followed by dates into a microwave safe bowl and microwave 30-45 seconds until oil is melted and dates are softened.

Step 3
Add dates, coconut oil, peanut butter, and vanilla to the food processor and process until ingredients become a sticky dough

Step 4
Pull off a tablespoon of dough, roll into a ball, and place on a large plate or in a large container. Repeat with the rest of the dough. Store the Superfood Protein Balls in the refrigerator and pull out for a quick and delicious breakfast component or snack!
