Description

These build-your-own muffins are delightful! The best part is you can mix and match your mix-ins. I find blueberries, diced strawberries, raisins, chopped nuts, and chocolate chips work best. With simple ingredients and a few minutes of prep, you'll have the scent of muffins drawing everyone to the kitchen.

Ingredients
  • 2 ripe bananas (mashed)
  • 4 whole eggs (whisked)
  • 1/4 cup raw honey
  • 1/4 cup avocado oil
  • 2 1/2 cups blanched almond flour
  • 1 teaspoon pure vanilla extract
  • 4 tablespoons tapioca flour
  • 2 teaspoons baking powder (aluminum free)
  • 1/4 teaspoon sea salt
  • 1 cup + 1/3 cup fresh blueberries, organic diced strawberries, organic raisins, chopped nuts, chocolate chips, etc.
Instructions
  1. Step 1

    Preheat the oven to 350ºF and line a regular muffin tin with 12 liners. On a plate, use a fork to mash the bananas until smooth, then add them to a large bowl followed by the rest of the ingredients. (If using a food processor, add all ingredients to the processor starting with eggs, honey, and bananas and then process until smooth.)

  2. Step 2
    Stir well until the batter is smooth and thick. Fold in 1 cup of the optional mix-ins. (If using a food processor, pour the batter into a bowl and then add 1 cup of the mix-ins and stir to combine.)
  3. Step 3
    Scoop the batter into the muffin liners about 3/4 full. Top with the remaining mix-ins. Bake in the oven for 28 minutes until a toothpick inserted comes out clean.
  4. Step 4
    Let the muffins cool completely, then serve. Store in an airtight container in the fridge for up to 3-5 days or freeze.
