Description

These peanut butter (or any nut butter) crispies are reminiscent of childhood with a flavor boost of peanut butter. They are the perfect snack or meal component and offer just the right amount of sweetness. You can customize these with a variety of add-ins, so take the recipe as a template and be creative!

Ingredients
  • 1/3 cup virgin coconut oil
  • 1/2 cup organic peanut butter (creamy or crunchy, no salt; substitute with cashew, almond, or walnut butter)
  • 1/4 cup raw honey
  • 1 teaspoon pure vanilla extract
  • 3 cups puffed rice cereal
  • 1/2 teaspoon sea salt
  • 1 tablespoon ground cninamon
  • 1/2 cup ground flaxseed (optional)
  • 1/2 cup collagen peptides (optional)
Instructions
  1. Step 1

    Line an 8x8 baking dish with parchment paper and set aside.

  2. Step 2

    In a small pot, gently melt the coconut oil, peanut butter, and honey on the stove top, stirring until smooth (about 5 minutes on medium low heat). Turn off the heat and pour in the pure vanilla extract. Stir and set aside.

  3. Step 3

    Pour the dry ingredients into a medium mixing bowl and stir to combine. (You can use both flaxseed and collagen, just one, or neither. If using neither, reduce the coconut oil to 1/4 c.)

  4. Step 4

    Pour the wet ingredients into the dry and stir to combine. Pour the prepared batter into the baking dish and refrigerate overnight or at least 1 hour. Cut and serve!
